My dad exposed me to new foods at a very young age. I have very vivid memories of our trip to Washington DC when I was 10 where he exposed me to Frogs Legs and Escargot as well as our month long adventure as a family in Europe where he exposed me to the foods of France, Italy, Germany, Austria, Switzerland, Denmark, and Holland. I was an adventurous eater willing to try most anything.
One of my dad's favorite ingredients was garlic. There could never be enough of it in a recipe. His favorite pizza was triple pepperoni with extra garlic! This recipe was shared with me by my Friend Laurie via Rosemarie De Angeles. I couldn't wait to make it for my dad on his next visit to Maine. 1 Cup small curd cottage cheese
1 Cup real mayonnaise
4 ounce canned chopped green chilies
4 ounce canned black olives
6 cloves fresh garlic minced
4 green onions finely diced
1 medium tomato finely chopped
Mix together all ingredients, cover and refrigerate.
