college basketball team. Each player has a role to play in order to assure a good outcome. In honor of March Madness I thought I would share four of my favorite easy appetizers with only four ingredients. Easy food to put together as you put your feet up to take in 63 games over the next three weeks. Good luck in the pool..... Perhaps Warren Buffet will have to pay some lucky soul one billion dollars.
Maple Pepper Salmon Bites (Salmon, Maple Syrup, Soy Sauce, and Coarse Ground Black Pepper)
Cut a 1 1/2 pound salmon fillet into bite size squares. ( I like to
use my kitchen shears to do this.) Marinate overnight in 1 cup of
maple syrup and 1/3 cup of soy sauce. When ready to serve preheat oven to 400 degrees. Dip one side of salmon into coarse black pepper and the place on baking sheet lined with parchment paper or aluminum foil that has been sprayed.
Bake until salmon is cooked through- 5-10 minutes depending on thickness .
Cheddar Cheese Toasts( Baguette, Shredded Sharp Cheddar, Roasted Red Pepper, and Cayenne)
Mix 4 cups of shredded sharp cheddar with 1/2 cup mayonnaise and 1/3 cup of finely chopped roasted red pepper and a couple pinches of cayenne depending on how spicy you want it. Spread on a sliced baguette and toast in 400 degree oven until bubbly.
Sweet Potato Triangles (Sweet Potato, Feta, Cumin Seed, Wonton Wrappers)
Roast 2 sweet potatoes ( 2 pounds) in oven until soft. 1 to 1 1/4
hours depending on size. Once cooled remove the skins and place in a bowl with 4 ounces of feta and 2 tsp. of cumin seeds. Add salt and pepper to taste. Lay out wonton wrappers and put a scoop of filling in the middle of each square. Spread water around edge of wonton and fold in half like a triangle sealing the edge. Fry in canola oil until crisp on each side. If you do this in advance you can reheat in the oven before serving. Put a small amount of red pepper jelly on top. ( I love Trader Joes Red Pepper Jelly)
Caprese Skewers (Mozzarella Balls, Cherry Tomato, Basil, and Balsamic Glaze)
Cut cherry tomatoes in half. Take a 4 inch skewer and put one half of tomato on with flat cut side on bottom followed by a piece of basil folded in half then a mozzarella ball, and the other half of tomato facing down. To serve place a dot of balsamic glaze( found at Trader Joes) on a plate and top with one the skewers. Continue until the plate is full.
