After my event this past Friday I had a container of Peanut Sauce from the Chicken Satay I had served. I went to the internet and googled peanut sauce to see what new and interesting recipes might pop up. Finally on page 4 of my search a recipe caught my eye......Thai Sweet Potato Stack with Peanut Sauce from the Minimalist Baker Website. A delicious lunch on this windy cold afternoon in Maine.

Red Curry Peanut Sauce
Saute a minced shallot and garlic clove until softened. Add 1 tablespoon of red curry paste and cook for 1 minute. Add 1 1 /2 tablespoon of brown sugar and stir until it melts. Add 6 tablespoons of smooth peanut butter and stir until it melts. Add 1 can of coconut milk and whisk until smooth over very low heat for a minute or two. Remove from the heat and add 2 tablespoons of lime juice and 1 tablespoon of fish sauce.
Sweet Potato Stacks
Slice two sweet potatoes in 1/4 inch pieces. Grease a baking sheet with cooking spray. Toss sweet potato slices in 1 tablespoon of sesame oil and spread out on the baking sheet. Bqke at 350 for 20-25 minutes until soft. Meanwhile chop 2 bunches of bok choy, a bunch of green onions, and a garlic clove and saute in 1 tablespoon of sesame oil and 1 tablespoon of soy sauce until softened. To assemble place a round of sweet potato, topped with bok choy and some peanut sauce. Repeat 3 more times so you have 4 layers in total. Sprinkle with chopped carrot and cilantro
